Similar to a frisella, it comes as a small disc just a few centimetres across, and it's very hard. That hardness is what gave it a long shelf life, back when shepherds stocked up on it for the seasonal move of their flocks. Moisten it with a splash of water and dress it as you like: tomato, garlic, basil and olive oil.
